Coconut French Toast

Ingredients
- 2 scoops Chai Ka'Chava
- 1 cup coconut milk
- 1/2 cup brown sugar or 1 cup maple syrup
- 1/4 cup vegetable oil
- 1 tbsp egg replacer
- 1 tsp coconut extract
- 1 tsp vanilla extract
- 6 slices of vegan bread
- Sliced fresh fruit and cinnamon for garnish
How to make
- Place the Ka'Chava, coconut milk, brown sugar, oil, egg substitute, coconut extract, and vanilla extract into a blender.
- Blend on high for 2 minutes, pausing now and then to scrape the sides of the blender jar. After blending, pour the mixture into a medium-sized bowl.
- Next, lightly spray a medium skillet with cooking spray and warm it over medium heat.
- Quickly immerse one slice of bread into the coconut milk mixture, ensuring it is well-coated, and place it in the hot skillet. Allow it to cook until the bottom becomes crisp, taking around 1 to 1 1/2 minutes. Flip the bread and let it cook on the other side for an additional 1 to 1 1/4 minutes.
- Continue this process with the remaining slices of bread and the Ka'Chava coconut milk mixture.
- When ready to serve, cut each toast slice diagonally and, if you like, adorn it with fruit and a sprinkle of cinnamon.
