Coconut French Toast

Ingredients

  • 2 scoops Chai Ka'Chava
  • 1 cup coconut milk
  • 1/2 cup brown sugar or 1 cup maple syrup
  • 1/4 cup vegetable oil
  • 1 tbsp egg replacer
  • 1 tsp coconut extract
  • 1 tsp vanilla extract
  • 6 slices of vegan bread
  • Sliced fresh fruit and cinnamon for garnish

How to make

  1. Place the Ka'Chava, coconut milk, brown sugar, oil, egg substitute, coconut extract, and vanilla extract into a blender.
  2. Blend on high for 2 minutes, pausing now and then to scrape the sides of the blender jar. After blending, pour the mixture into a medium-sized bowl.
  3. Next, lightly spray a medium skillet with cooking spray and warm it over medium heat.
  4. Quickly immerse one slice of bread into the coconut milk mixture, ensuring it is well-coated, and place it in the hot skillet. Allow it to cook until the bottom becomes crisp, taking around 1 to 1 1/2 minutes. Flip the bread and let it cook on the other side for an additional 1 to 1 1/4 minutes.
  5. Continue this process with the remaining slices of bread and the Ka'Chava coconut milk mixture.
  6. When ready to serve, cut each toast slice diagonally and, if you like, adorn it with fruit and a sprinkle of cinnamon.
